The milk from a Jersey cow is also different from a black-and-white Holsteiner’s milk. For instance, it contains more protein, more fat and a very DIFFERENTflavor. Carotene is a natural yellow pigment in milk. Jersey milk has a higher carotene content than milk from other breeds of cattle and that’s what causes the characteristic yellow color.

Sources of protein include meat and dairy products as well as nuts, seeds and legumes. 100 milliliters of Jersey milk contains 4.2 grams of protein, whereas regular milk contains just 3.5 grams on average.
