Ingredients for 2 sandwiches:

- 100g Landana Jersey Matured
- 4 slices of sourdough bread (or any other hearty bread of your choice)
- 100g kimchi, drained and finely chopped
- 2 tablespoons of butter, room temperature
- Optional: 1 teaspoon of sesame seeds or spring onions for extra flavor
Preperation:
- Prepare the toast:
- Spread a thin layer of butter on one side of each slice of bread. This will make the toast golden brown and crispy when frying.
- Place two slices of bread with the buttered side down.
- Assemble:
- Evenly distribute the grated Jersey cheese on the two slices of bread.
- Top the cheese with the chopped kimchi.
- Optional: Sprinkle some sesame seeds or finely chopped spring onions on the cheese and kimchi for an extra flavor boost.
- Place the other slices of bread on top, buttered side up.
- Fry the toast:
- Heat a pan over medium heat. Place the toasts in the pan and fry them for about 3-4 minutes on each side, until the bread is golden brown and crispy, and the cheese has melted. Gently press down with a spatula to help the cheese melt and mix with the kimchi.
- Serve:
- Remove the toasts from the pan and cut them diagonally.
- Serve immediately while hot and enjoy the delicious combination of creamy cheese and spicy kimchi!
